Your diet's not horrible, though you really should toss the pellets. They're not providing her the correct balance of nutrients. Gliders are so tiny that every bite is important.
She should get fresh fruit and vegetables every day, along with a protein. The amounts, for a grown glider, are one tablespoon each of the fruit and veg, and two tablespoons of protein. Chicken is good, and the egg; add some ground turkey and shrimp or salmon to your rotation. Check out some of the diets like LGRS Suggie Soup, HPW, BML. Those mixes are the protein source, and you wouldn't offer chicken etc. in addition to the mix if you switched -- though you could substitute just for variety. Kazko's Diet offers a meat source along with a blend.
Keep an eye on the calcium to phosphorus ratios of the diet, too. Here's an article to explain, and give you some guidance:
