You MIGHT start to see the tail about 2 weeks before the joey comes OOP (7-8 weeks IP). There is no guarantee that you WILL see body parts hanging out until the joey is OOP - esp. if there is only one joey.

The joey is not OOP until it completely detaches and stays detached between feedings. They know when it is time and will do this all on their own.

the first time you see a body part hanging out you will get all excited sort of like x-mas morning when you were a small child. Then the day they are oop and you can hold them it is better than opening all the presents, they just melt you heart

This is a great sign! I remember my first joeys momma was soo protective she wouldn't even let be babysit until the joeys' eyes were open, so that is pretty much about a week of being able to look and not touch. lol
Just be sure she's getting enough protein and calcium to supplement the joeys, I personally like to feed silkworms and calcium gut-loaded crickets for calcium, and mealizies for protein of course! But even running out to the local butcher's to pick up chicken hearts and gizzards is a healthy snack in moderation, I recommend that they be cooked prior via boiling them as it kills off any bacteria and parasites that might be hiding on/in them.
