1. there is no way to tell she's pregnant. There are no visible signs until a couple weeks after the mom has given birth. At that point you will start to see baby bumps in her pouch and she is no longer pregnant, at that point it's called In pouch or joeys in pouch.

2 There really isn't an answer to this. Every glider is different.

Many things can signal when it's time to stop allowing a pair to breed. Temperament, Aggression, rejecting babies, eating babies, age, medical issues and so on.

It's not determined by how many babies they have produced.

So once she rejects or eats a baby, it is recommended to neuter the male?

If you have them cannibalize or reject two times, then you should retire them from breeding. However it is up to you but that's what I've always heard.

That's more complicated than just "if they cannibalize 2 times", that's just a lazy answer some people repeat ad nauseam to justify their choice rather than searching further.
If a pair cannibalizes or rejects its own joeys repeatedly, it usually means that there is a problem, be it nutrition, housing, stress, sickness or whatever, and just retiring them from breeding does not solve the problem causing cannibalism/rejection 1st place, it's like breaking the thermometer when it says you have fever instead of searching and treating the disease which causes you fever
