I just got two rehomed gliders two nights ago. They were on a pellet diet and I want to transition them to the hpw that my other glider is on. How do I go about doing this? I have heard mix the food, go cold turkey, start with mostly grain, what should I do?

Most people just do a cold turkey switch to the diet you want to use. It might take them a little while to get used to the new diet and eat it well, so give it some time, a few nights of not eating great is normal.

Once we started using Ohpw we would switch over to it cold turkey for any new gliders.
the gliders would usually start eating the Ohpw right away, but usually it
takes them a long time to really start eating the fruits and veggies. our last
additions took almost 2 months. maybe you can try to hand feed them some corn or a pea to give them a taste and they will help they start eating fruits and veggies.
we use one of the lists from critterlove.com for fruits and veggies.
