One of my females is 2.5 ounces and my biggest male is 6 ounces. It's hard to say, like weight in people, but I'd guess a few month OOP glider should be about 2-3 oz.

The crabby one might need extra TLC. What are you doing with her/him to bond? If they are new to your place, there is a fear factor to consider. It will take awhile for them to trust you. Even if they are not the joeys you expected, they are still yours now and can be helped to be great and lovely additions to your family.

There are excellent sites with bonding, trust, and feeding info. Armed with some knowledge and patience, you'll be fine.
