I know you are supposed to wait till they are in their pouches but I might want to hold her at night

Most gliders do not like being held, especially at night. I would recommend letting her climb on you instead of picking her up unless she actually likes it. Also if she doesn't want to come to you of her own free will it's possible she isn't bonded enough and trying to pick her up could hurt your bonding process.
