Well a lack of crabbing is generally a good sign. It is also worth mentioning that the age of the glider plays a role in deciding what level of crabbing or lack of crabbing may be 'normal'. For instance, a young joey will rarely crab because they don't quite know to be afraid yet. They don't seem to hit their crabby adolescent stage until 10-12 weeks. In an older glider, the lack of crabbing could suggest they came from a home where they were handled often and are comfortable with people. (My little boys will let anyone hold them without protest or even a hint of crabbing... though it has been a long road to get them to this point.) FTR I would not expect any glider to crab once you have scooped them up in their pouch and are pulling them out. Typically if they were going to crab them it would be as they saw you reaching in. If they were asleep when you grabbed them, then they wouldn't really have the chance to crab before you were holding them. Same as people, they are understandably disoriented when roused awake. Not to mention that they are exponentially calmer during daylight hours because this is their 'sleep' time. So to answer your question more effectively, I would ask the following first: How old is your glider? What time of day/night are you picking him up? How does he behave 'after' you've picked him up? Is he eating/drinking well?
