Sounds like you are doing things right. The bonding pouch isn't a must, it's just a safety precaution. Every household is different. If you don't have other pets, or the other pets are confined somewhere when you have your glider out, then not using the pouch is probably fine. Of course, don't go outside or anything like that. Bonding pouches are more of a must when you first get your glider. Until you start building that trust it probably is good to just go ahead and use the bonding pouch, that's what it's for anyway.
Sounds like he already trusts you pretty well! Keep in mind that when he does get hyper and not want to stay on you, that doesn't mean he doesn't trust you. That's completely normal and most gliders will be this way. When they are awake, they generally want to explore and not just sit in one spot.
