These little guys eat sap and nectar in the wild and that's really sweet so the honey approximates that. We only recommend cutting back on the honey if your gliders get fat on it. But if they are not eating the soup so much and favor fruits and veggies you are actually ahead of the game... because in most cases it's the other way around...
Anyway, the only problem with them ignoring the soup and mostly eating fruits and veggies is that most fruits and veggies are upside-down Ca:P-wise. You can fix that by adding a little calcium powder to those relishes or by using relishes that are 2:1 from the start. Check out the resources tab here and look under "nutrition" and you will see a lot of recipes for fruit and veggie mixes that are 2:1.
One pinch of calcium powder (1/8th of a teaspoon) can be spread over 10 servings of glider food and that will yield between 15 - 25 mg per serving. Most gliders will not metabolize the 25 mg because most don't actually eat the whole serving. They will end up metabolizing 10 - 15 mg. If they do eat *everything* then you can spread a pinch across 15 servings or slightly more.
That said, I would continue feeding the fruit and veggie mixes and a little soup on the side - adjusted for what they eat.
The other alternative is to blend the fruits and veggies in with the soup so they eat the whole mixture. Then you can feed them "hard" treats like mealworms and such on the side so they have the fun of holding on to something when they eat.
'Hope this helps
